Marble Chocolate Mirror Glaze
INGREDIENTS
Marble Glaze
150g water
290g white sugar
300g glucose syrup
300g white chocolate
195g condensed milk
20g gelatin sheets
2 chosen food colouring

Steps
1. Soak the gelatin sheets in cold water for 10 minutes until it blooms. Set aside.
2. Place a medium sized sauce pan on the stove and set to medium heat. Add in the water, sugar and glucose syrup. Stir occasionally and wait till it boils.
3. Once it boils, remove the sauce pan from the heat and begin pouring it into a bowl of white chocolate, condensed milk and bloomed gelatin sheets. Stir till everything has melted and dissolved.
4. Next, mix the glaze using a hand blender - just until smooth and creamy.
5. Divide the glaze into 2 bowls, colouring them with your chosen colours. Mix.
6. Cover the 2 bowls with a cling wrap, making sure the wrap touches the mixture and sticks to the sides of the bowl. Set in the fridge for 5 minutes until it reaches 35C. (Use a cooking thermometer! If the temperature goes too low, just reheat the glaze in the microwave for roughly 10 seconds. Remember, we don't want the glaze too hot or too cold. It just needs to be warm enough when you hold it.
7. Once that's done, get a measuring cup then pour both bowls into it at the same time - so when you pour it on your cake, it will have that marble effect!
