Beach themed cupcakes are a terrific choice of treat especially when everyone is all hyped up and excited for summer! I find this theme really cute and creative, especially when you're planning a small hangout sesh with friends or family.

I really love how these cupcakes turned out. For that beach effect, I finely crushed biscuits (using a food processor) to act as sand and piped out blue buttercream for the waves (make sure to use a spiky tip for a realistic wavey look)

INGREDIENTS

Cupcake:
- 200g plain flour
- 2 cups caster sugar
- 1/2 cup buttermilk (or milk)
- 3/4 tspn baking powder
- 2 tspns vanilla extract (or your chosen flavour!)
- 1/4 tspn salt
- 1/2 tspn baking soda
- 2 eggs
- 1 cup canola oil

Topping:
- ready made vanilla buttercream
- 60g finely crushed light brown biscuits
- blue food colouring
- mini umbrella or any beach toppers

Tools:
- 1 piping bag (with a 32 tip or anything spiky!)
- 1 baking tray
- 12-14 cupcake cases (or liners)
- food processor (for the biscuits)

Baking Time:

180 degrees - conventional
20 - 25 minutes
